Pav Bhaji rolls are a comfort food that takes you straight up on an Indian street food experience. You can confidently make these at home, by preparing the pav, which is the soft bread roll, and Bhaji, the tantalising curry.

Recipe for the dough

3 and a 1/2 cup plain flour
1 tbsp yeast
2 tbsp sugar
1/2 cup oil
1tsp salt
1 cup warm milk if more liquid needed, add water.

Method:

Mix all dry ingredients then mix the wet ingredients.
Make a smooth soft dough. Cover for 1/2 an hour.
Once risen, roll into a big rectangle. Spread butter evenly, then some bread crumbs. Now spread the bhaji carefully. Sprinkle dhania/coriander. Now from the bottom end start rolling carefully till the other end. Cut into 1″ rolls. Assemble in a greased & bread crumbs dusted baking tin. Arrange the rolls and garnish with tomato cubes. Bake in a preheated oven @160 °c for 20 mins or till golden brown. Once done, remove & brush with some butter. Sprinkle fresh dhania & serve with a spicy chutney.

Recipe for Bhaji

1 big bowl of mix vegetables (carrot, peas, capcicum, brinjal) this is what I used. Steamed & mashed. You can use your choice of vegetables.
7-8 potatoes boiled & roughly mashed
1 big onion chopped
4 ripe tomatoes pureed
1 tsp tomato paste
1 tsp ginger garlic chilli paste or more if you want
2 tbsp butter
1 tbsp oil
1 tsp whole jeera
Salt to taste
3/4 tsp turmeric powder
1 tsp dhania powder
1/2 tsp jeera powder
Abit of black pepper powder
1 tsp kashmiri red chilli powder or more if you want
Lots of chopped dhania
1 tsp badshah pav bhaji masala
1/2 tsp garam masala

Method :
In a big cooking pot add the butter and oil. Once done add jeera then the onions. Once they are just pink in color add the ginger garlic chilli paste. Cook for only a few seconds. Add the spices. Then add the tomato paste then the puree. Mix well. Let this cook till you see the oil on top. Add the mashed mixture and the potatoes. Mix well. Check the salt and other ingredients. Add more if you want.
Add little water simmer for 20 minutes. Add the dhania.
Once done serve hot with toasted Pav.
